Soba Noodle, Shrimp and Vegetable Salad with Toasted Virgin Sesame Oil and Passion Fruit & Olivier Vinegar

Salade de Nouilles Soba, crevettes et petits légumes  à l’huile vierge de sésame toasté et vinaigre & fruit de la passion A l’Olivier

Ingredients

  • 400 g Soba noodles
  • 200 g snap peas
  • 140 g canned peas
  • 150 g cooked pink shrimp
  • 4 tbsp peanut butter
  • 3 tbsp salted soy sauce
  • Juice of one lime
  • 2 tbsp honey
  • 1 crushed garlic clove
  • 3 tbsp A l'Olivier toasted sesame oil
  • 1 tbsp A l'Olivier passion fruit vinegar
  • Optional: one stalk of chopped lemongrass (fresh or frozen)
  • Optional: chopped and frozen red chili pepper

Preparation

1. Bring a large pot of salted water to a boil over high heat.

2. Cook the noodles and snap peas together for 4 to 5 minutes.

3. Rinse everything with cold water, drain, and set aside.

4. Drain the peas and set aside.

5. Blend until smooth: peanut butter, soy sauce, lime juice, honey, garlic, A l'Olivier toasted sesame oil, and A l'Olivier passion fruit vinegar.

6. In a salad bowl, add the noodles, snap peas, peas, and cooked pink shrimp. Mix.

7. If desired, add chopped lemongrass and/or red chili pepper.

8. Pour the Asian sauce over the salad and enjoy.
