CHOCOLATE MOUSSE WITH FLEUR DE SEL, AROMATIC NICE LEMON OLIVE OIL, BY L'OLIVIER

MOUSSE AU CHOCOLAT ET FLEUR DE SEL À L’HUILE D’OLIVE AROMATIQUE CITRON DU PAYS DE NICE A L’OLIVIER

Ingredients

Preparation

1. Melt the chocolate in a bain-marie.

2. Off the heat, add the yolks and A l'Olivier Nice Lemon Flavored Olive Oil, mixing with a flexible spatula.

3. In a bowl, whip the egg whites until stiff.

4. Gently fold the egg whites into the chocolate-yolk-olive oil mixture.

5. Divide the mousse into 4 verrines or small bowls.

6. Place in the refrigerator for at least 3 hours, ideally overnight.

7. Before serving, grate a little lemon zest over each chocolate mousse.

8. Add a few drops of A l'Olivier Nice Lemon Flavored Olive Oil and a pinch of fleur de sel.

9. Serve well chilled.
