In the heart of the Alpilles massif, the AOP Huile d’Olive de la Vallée des Baux de Provence (Olive Oil of the Baux de Provence Valley PDO) recognizes an exceptional olive-growing region.

Our oil is characterized on the nose and palate by the presence of at least two of the following flavors: grass, apple, almond, raw artichoke or hazelnut.
It is also distinguished by moderate bitterness and pungency.
