1. In a large bowl, sift the flour and make a well in the center.

3. Gradually pour in the milk while continuing to mix to avoid lumps.

4. Add the sugar, salt, and vanilla olive oil. Mix well until a smooth batter is obtained.

5. Let the batter rest for about 20 minutes at room temperature. This step allows the batter to rest and perfectly absorb the flavors.

6. In a hot pan, add a small knob of butter to lightly grease the surface.

7. Pour a small ladle of batter into the pan, spread it quickly by tilting the pan to form a thin crepe.

8. Cook each crepe for about 1 to 2 minutes on each side, until golden brown.

9. Repeat the process until all the batter is used.

10. Serve the crepes hot with your favorite toppings, such as sugar, maple syrup, fresh fruit, or even a touch of whipped cream.
