Chef Keisuke Matsushima offers an original take on the fresh green bean salad. He combines them with cherries and enhances it all with lemon and fresh ginger olive oil. Who would have thought ? It is simple, and it works well ! It is surprising and delicious !
Our lemon and ginger olive oil is perfect for adding a touch of exoticism to your salads. In extra virgin oil, we macerate lemon zests for the flavour and fresh root ginger for the character. The result is fresh and intense. You can also use this oil for exotic dishes such as Thai salads, mayonnaise or marinades for fish and poultry.

RECIPE : Green bean and cherry salad with lemon and ginger olive oil

For 2 people:
200 g of fresh green beans / 1 shallot / a handful of cherries / lemon & ginger olive oil / salt

Remove the stalk and pips from the beans and cherries. Finely chop the shallot.
Add it to the cherries and season with lemon & ginger olive oil and a pinch of salt.
Place the beans in a pan of boiling water.
Leave for 10 to 15 minutes. Then plunge them into ice-cold water and let them drain.
Arrange the beans and cherries on a plate and enjoy !
