Ingredients:
- 4 lamb chops
- 1 shallot
- ½ glass of dry white wine
- 1 tablespoon olive oil
- 30 ml raspberry vinegar
- Salt, pepper
- A few fresh raspberries for decoration (optional)
Preparation:
1. Prepare the sauce
Peel and finely slice the shallot.
Sauté it gently in a pan with olive oil until translucent.
Deglaze with raspberry vinegar, then add the white wine.
Reduce for 3 to 4 minutes, stirring regularly, and keep warm.
2. Cook the lamb chops
Heat a pan without fat. Sear the lamb chops for 2 to 3 minutes on each side (or according to desired doneness). Season with salt and pepper at the end of cooking.
3. Plate
Arrange the lamb chops on plates, drizzle with raspberry sauce, and add a few fresh raspberries for a fruity and visual touch.
Tip:
Serve this dish with new potatoes or homemade mashed potatoes for an even more gourmet result!
