After the nuts are hand-picked, they are sorted, rosted and ground in order to extract the oil.
Argan oil offers the aroma of lightly roasted nuts, and its taste recalls unshelled hazelnuts and almonds. In traditional Berber cuisine, argan oil is mixed with various local ingredients (honey, olive oil, lemon) and eaten, with bread, for breakfast. It works well drizzled on green salads, grilled vegetables, tajines, or in pastillas. It is also suitable with desserts including red fruit or citrus fruit salads, and possibly as an ingredient in brioche.
Argan oil blends well with lemon juice or oils made with Menton lemons, lemon and ginger-infused oils, or mixed with honey as part of a traditional Berber breakfast.
