Recipe : Small green asparagus, salad dressing with fresh herbs and olive oil featuring Menton lemons

It is full-on asparagus season. Let’s take advantage of this, and prepare it fresh, in a salad or side; it takes no time at all! Just try to season it with some fresh herbs and our olive oil with Menton lemon… a pure delight.

Our Menton lemon oil does something electric to asparagus and vegetables in general, giving them a hint of freshness that helps sublimate their natural flavors. Harvested close to our workshops, Menton lemons are prepared immediately, to extract the best of their aromas, which are then carefully incorporated into our olive oils.

Small green asparagus, salad dressing with fresh herbs and olive oil featuring Menton lemons

Ingredients for 2/3 people
-1 bunch of green asparagus
-4 small new onions
-1 sprig of mint
-1 sprig of parsley
-1 sprig of Basil
-6 tbsp. of Menton lemon olive oil
-1 fillet of olive oil
-A few parmesan shavings
-Salt, pepper

Cut the tails off the asparagus, and peel the stem.
Pour a drizzle of olive oil into a pan and sauté the asparagus with the onions for 10 minutes over low heat.
Prepare the vinaigrette with Menton lemon olive oil, along with a few drops of balsamic vinegar, salt and pepper.
Hand-chop the fresh herbs and add them to the dressing.
Drizzle the Menton lemon vinaigrette over the cooled asparagus.
Add a few parmesan shavings.
