RECIPE N°7: Pumpkin with citrus fruit and creamy mango, Argan oil and coriander sauce

Whenever winter begins to bite, what could be more comforting than a warming dish that is simple and delicacy finess Pumpkin is a delicious winter vegetable with a soft, slightly sweet and buttery flesh that will be sublime on any festive table.

In order to preserve all the delicate pumpkin flavours, Christian Le Squer has opted to gently cook the pumpkin and infuse it with a carefully crafted sauce that brings added freshness and character. To achieve this, he harmoniously blends Argan oil that has a slightly fresh almond flavours with Nice lemons and mango, and then accompanies all of the above with a dash of balsamic vinegar cream to add a creamy texture.

A recipe to warm the heart.




Pumpkin with citrus fruit and creamy mango, Argan oil and coriander sauce


Preparation time: 35 minutes / Cooking time: 25 minutes

– Sauce

The four main ingredients used in this recipe have been curated in an A L’Olivier branded gift box

  • 4 slices of pumpkin with the skin on
  • 50 g Parmesan shavings
  • Baby coriander shoots
  • 1 tablespoon pink peppercorns
  • Optional: sorrel leaves and marigold blossoms or a salad of dried flowers (roses, cornflowers, marigolds) 



– Sauce

Blend the Nice lemon infused olive oil with the white balsamic cream and then add the Organic virgin Argan oil and mango infused vinegar.

– Dish

Steam the pumpkin slices with the skin on for 25 minutes.
Once cooked, sprinkle over a little of the sauce.
Crush the pink peppercorns



Arrange a pumpkin slice on a plate.
Scatter over baby coriander shoots, Parmesan shavings and cracked pink peppercorns.
Generously portion the sauce in front of the pumpkin.
Sprinkle with flowers blossoms.
